I think a more fitting time to spring the allergy on the person(rather than the tag along npc), would be maybe banana cream icing at a fancy banquet where they are trying to make a good impression. It would be easy for them to forget, and doesn't involve an NPC maliciously trying to screw people he is traveling with.

Now if any of the PC's enemies are at the event and notice the reaction of the player, there could be a few interesting encounters as the real villain uses a parade of mooks with different foods to attempt to discover which food caused the allergy.

Villain of the Arc: Hmm, no reaction to the chocolate souffle pit trap, that just leaves the strawberry icing on the cupcakes or the banana icing from that delectable cake. Hmm, I wonder if that baker delivers.
Second in command: To test the allergy, sir?
